Chicharra is a Yucatecan Street food which is fried pork belly with the skin of it too. The recipe includes: the shell or fried skin of the pork, the solid which is the meat with little fat from the pork that can be leg or loin, the castacán (pork meat with skin that is fried), the puyul or the fat of the pork and different types of viscera such as liver, entresijo (pleated peritoneum that joins the stomach and intestine of the pig with the abdominal walls) or crop (fried pig stomach). The latter are often optional.

It is prepared with sour orange juice, finely chopped habanero peppers, and a refreshing salad of diced cabbage, tomatoes, cilantro, and onion to be eaten later in tacos.
